I am able to write ~20 poems in 1 hour (3 minutes per poem). 

It's possible I won't have time to get to everyone depending on the event duration and number of guests. However, the total number of guests still influences the price because of the time that interactions can take and increased difficulty in managing the line.

For many events, a great way to go is a reduced flat fee + directly charging each customer for their poems. I charge $10 per poem when paid individually.
